Hearty lentil and sausage soup recipe

 

This hearty lentil and sausage soup is the ultimate comfort food for cold winter days. Packed full of protein and loaded with vegetables, it’s a wholesome meal that’s easy to prepare even on busy weeknights. Ingredients:

1 Tbsp olive oil
4-6 sausages (of your preferred variety) sliced into rounds
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
2 cups dried lentils, rinsed and drained
1 can (400g) diced tomatoes
6 cups chicken or vegetable stock
1 tsp dried thyme
1 tsp dried oregano
2 cups fresh spinach or kale, chopped
2 Tbsp fresh parsley, chopped (optional)
Bread to serve with (optional)


Instructions:

Heat the oil
On a gas stovetop, heat the olive oil in a large pot over medium heat. Add the sausage slices and cook until browned, about 5 minutes. Remove the sausages from the pot and set them aside.

Sauté the vegetables
In the same pot, add the diced onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften. Add the minced garlic and cook for another minute until fragrant.

Add lentils and stock
Stir in the lentils, diced tomatoes (with their juice), and chicken or vegetable stock. Add the thyme and oregano. Season with salt and pepper to taste. Bring the mixture to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low and let the soup simmer on the gas stovetop for about 30 minutes, or until the lentils are tender.

Add the sausages and greens
Return the browned sausages to the pot and stir in the chopped spinach or kale. Let the soup simmer for an additional 5-10 minutes until the greens are wilted and the sausages are heated through.

Serve
Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot, with crusty bread on the side.
